VINIFERM 522
Viniferm 522 is a yeast with regular kinetics and short dormancy period. Effective control of indigenous microbiota in poor quality harvests
CHARACTERISTICS
It adapts well to difficult fermentation conditions such as high fermentation temperatures, high probable alcohol content or late harvests.
APPLICATION
- Suitable for the production of red wines with short macerations: its agility at the beginning of fermentation allows obtaining a good part of the ethanol in the first 3-4 days of fermentation, helping the extraction of color in short vatings.
- Elaboration of full-bodied rosé wines.
- The use of this strain is recommended to counteract high levels of undesirable indigenous yeast: in the case of late harvests or botrytized grapes.

- Vinification 20-30 g/hl
- Fermentation stops 30-50 g/hl
