Agrovin Group launches first book on ORP in oenology

It is the only publication that currently exists on this subject and its usefulness in improving the quality of wines.

 

August 20, 2024. – Oenology professionals have a new ally in their elaborations. Agrovin, a company specializing in winemaking solutions and applications, has just launched the book “ORP in wine: In-depth analysis“, a study that compiles more than 10 years of knowledge on this subject of great value for the winemaking sector, and of which there was practically no documentation applied to the process to date.

 

A knowledge gap that needed to be filled, taking into account the influence of ORP in a large number of physical and biochemical processes that affect the final quality of the wine. This factor intervenes, for example, in the metabolism of yeasts, their development, enzymatic activity and the stability of phenolic compounds, and is also a key element in the production, perception and preservation of aromas.

 

The study describes the experiences and conclusions accumulated by the Agrovin team over more than a decade of research on ORP and its role in each stage of winemaking. Thus, the book differentiates the influence of ORP during the processes of alcoholic fermentation, malolactic fermentation, and conservation, also providing information on how to monitor the risk of oxygenation or reduction and ideas for intervening in the different scenarios that winemaking professionals face in their day-to-day work.

 

It is, therefore, a pioneering work in the field of enology and a valuable guide for all those winemakers who are not satisfied with knowing the oxidation-reduction level of their wines but who wish to have the possibility of controlling and optimizing it. The book published by Agrovin offers them this option, providing valuable information about the influence of ORP on biocontrol and microbiological development, aging potential, conservation capacity, aromatic profile and control of processes, and management of winemaking products.
