Its rapid lysis makes it interesting for aging on lees in tank or barrel, where it softens and enhances the aromatic characteristics of the wood.
Cryophilic yeast that allows fermentation at low temperatures, an aspect that, together with its varietal character, maintains and accentuates the typicity of the grapes.
APPLICATION
- Varietal wines in which it is desired to accentuate the sensations in the mouth, particularly suitable for Albariño, Treixadura, Loureiro, Xarel.lo, Verdejo, Macabeo, Chardonnay, Viognier or Sauvignon blanc.
- Controlled fermentation of neutral varieties with highly clarified musts.
- Production of barrel-fermented white wines.
- Production of floral rosé wines with increased volume on the palate.
- Sparkling wine production.
