Harvest and fermentation

Harvest time is the busiest time in the winery. Constant decision making during a dynamic process with varying conditions makes it necessary to adapt protocols in order to achieve a single objective: to obtain quality wines.

The determination of the optimum harvest date is the beginning of a process in which the character of the desired wine will determine the steps to follow and the most appropriate techniques to use.
