Proveget Lumière acts selectively on oxidized and oxidizable polyphenols without interfering with the aromatic compounds or the varietal expression of the wine. Unlike PVPP, which under certain conditions can induce slight bitter or astringent notes—especially in sensitive matrices or at high doses—Proveget Lumière does not cause sensory imbalances. Its natural and balanced composition preserves the freshness, brightness, and typical characteristics of the wine, offering clean clarification that respects the organoleptic profile, even reducing bitter and astringent notes.

Although Proveget Lumière is not specifically formulated as a deproteinizing agent, its natural bentonite content may contribute to the flocculation and partial removal of unstable proteins present in the must. However, this action is complementary and does not replace a specific protein stabilization treatment. Therefore, depending on the degree of protein instability in the wine, it may be necessary to apply a suitable deproteinizing agent afterwards.

Although Proveget Lumière is not specifically designed to eliminate the polyphenols responsible for pinking, its action on oxidation precursors—especially hydroxycinnamic acids and catechins—as well as its ability to intercept reactive quinones, contributes to significantly reducing the risk of this phenomenon occurring in sensitive varieties.

The optimal time for application is at 1/3 of alcoholic fermentation. This promotes early action on polyphenols, limiting their involvement in browning reactions, secondary oxidation, and the formation of unstable colloidal complexes.

Thanks to the synergy between its mineral fraction (bentonite) and its protein components, Proveget Lumière generates compact, easy-to-separate sediments, which improves racking efficiency, reduces wine losses, and contributes to a cleaner and more predictable operation.
