Actua inibindo a cristaliza\u00e7\u00e3o dos sais de bitartarato de pot\u00e1ssio e de tartarato de c\u00e1lcio, impedindo assim que as mol\u00e9culas de tartarato insolubilizadas se juntem e impedindo assim o crescimento de cristais.<\/p>\n

Quando adicionado ao vinho, o Metavimon \u00e9 lentamente hidrolisado e transformado novamente em \u00e1cido tart\u00e1rico e perde gradualmente a sua actividade.<\/p>\n

A efic\u00e1cia do Metavimon depende da temperatura de armazenamento do vinho tratado. A baixas temperaturas, a sua hidr\u00f3lise \u00e9 mais lenta.<\/p>\n

O Metavimon tem uma elevada taxa de esterifica\u00e7\u00e3o.<\/p>\n
