identifica\u00e7\u00e3o de popula\u00e7\u00f5es vi\u00e1veis de leveduras e bact\u00e9rias com um duplo objetivo:<\/p><ul><li>Monitorizar a fermenta\u00e7\u00e3o alco\u00f3lica, a fermenta\u00e7\u00e3o malol\u00e1ctica, ou detetar altera\u00e7\u00f5es microbiol\u00f3gicas durante as diferentes fases de produ\u00e7\u00e3o do vinho.<\/li><li>Ajustar os tratamentos f\u00edsicos e\/ou qu\u00edmicos, evitando riscos no vinho engarrafado.<\/li><\/ul><p><strong><em>Para este fim, s\u00e3o utilizadas t\u00e9cnicas de cultura em placas, com meios e condi\u00e7\u00f5es de cultura seletivos, que permitem a contagem de leveduras fermentativas, bact\u00e9rias l\u00e1cticas, bact\u00e9rias ac\u00e9ticas e Brettanomyces.\u00a0<\/em><\/strong><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-280e40f elementor-widget elementor-widget-heading\" data-id=\"280e40f\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 microsc\u00f3pica com a colora\u00e7\u00e3o, \u00e9 tamb\u00e9m poss\u00edvel diferenciar entre microrganismos vi\u00e1veis e n\u00e3o grau de implanta\u00e7\u00e3o da estirpe de leveduras ou bact\u00e9rias l\u00e1cticas inoculadas, que est\u00e3o a realizar a fermenta\u00e7\u00e3o alco\u00f3lica ou malol\u00e1ctica numa determinada
