A falta de informa\u00e7\u00e3o sobre as capacidades de fermenta\u00e7\u00e3o de cada estirpe significa que muitas vezes os en\u00f3logos n\u00e3o trabalham com as estirpes mais apropriadas para as condi\u00e7\u00f5es do mosto com que est\u00e3o a trabalhar, ou para o tipo de vinho que querem produzir. Al\u00e9m disso, na adega utiliza-se quase exclusivamente Saccharomyces para a produ\u00e7\u00e3o de vinho, quando se sabe agora que existe uma multiplicidade de atividades enzim\u00e1ticas associadas a outras esp\u00e9cies de leveduras que t\u00eam um efeito muito apreci\u00e1vel sobre o perfil sensorial dos vinhos. Este projeto de I+D intitulado &#8220;ESTUDO DE ATIVIDADES ENZIM\u00c1TICAS E ELEMENTOS ANTIOXIDANTES DE ORIGEM BIOL\u00d3GICA PARA O DESENVOLVIMENTO DE VINHOS BRANCOS E ROS\u00c9S&#8221;, tem como objetivo geral abordar este problema, concentrando-se numa sele\u00e7\u00e3o e caracteriza\u00e7\u00e3o das atividades enzim\u00e1ticas das leveduras que permitam ao en\u00f3logo escolher as estirpes mais apropriadas de acordo com as suas necessidades na adega, A fim de ter tudo isto em conta e fornecer aos en\u00f3logos, num mercado vin\u00edcola cada vez mais tecnol\u00f3gico, as ferramentas apropriadas para uma abordagem inovadora da vinifica\u00e7\u00e3o, pretende-se desenvolver diferentes objetivos atrav\u00e9s das abordagens experimentais mais apropriadas em cada caso.<\/p><p><strong>\u00a0<\/strong><\/p><p><strong>CONVOCAT\u00d3RIA:\u00a0<\/strong>CDTI.
