\u00e8 a rischio di ossidazione (alto potenziale) o di riduzione (basso potenziale). In base a questo valore, \u00e8 possibile effettuare una gestione pi\u00f9 intelligente dell&#8217;apporto di ossigeno e antiossidanti durante la vinificazione.<\/p><p>Nel vino, le reazioni multiple che coinvolgono un gran numero di composti avvengono in successione, spontaneamente e simultaneamente, e il vino presenta una moltitudine di coppie redox. Ci\u00f2 rende impossibile raggiungere l&#8217;equilibrio nel mezzo. L&#8217;evoluzione del potenziale durante il processo di vinificazione indicher\u00e0 in quali punti del processo \u00e8 necessario aggiungere ossigeno, perch\u00e9 il potenziale scende a valori molto bassi, o quando \u00e8 necessario applicare antiossidanti perch\u00e9 il potenziale ha raggiunto valori troppo elevati.<\/p><p>Conoscendo l&#8217;intervallo di valori entro cui questo parametro, il potenziale, deve essere mantenuto durante la vinificazione e controllando l&#8217;apporto di ossigeno per mantenerlo entro i valori limite, si otterr\u00e0 una vinificazione pi\u00f9 sicura e adeguata al tipo di prodotto.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-f7bab14 elementor-widget elementor-widget-image\" data-id=\"f7bab14\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"image.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<img decoding=\"async\" width=\"1\" height=\"1\" src=\"https:\/\/agrovin.com\/wp-content\/uploads\/2023\/01\/Redox-elaboracio\u0301n-vino.svg\" class=\"attachment-large size-large wp-image-95375\" alt=\"\" title=\"\">\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-c45dc35 elementor-widget elementor-widget-text-editor\" data-id=\"c45dc35\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>Il controllo del potenziale redox durante la fermentazione alcolica sar\u00e0 fondamentale per evitare possibili deviazioni organolettiche.<\/strong> Durante la fermentazione, nella fase di crescita esponenziale del lievito, si verifica un brusco calo del potenziale redox e a potenziali inferiori a -70mV inizia il rischio di formazione spontanea di idrogeno solforato chimico.<\/p><p>Durante la conservazione, occorre prestare attenzione alla possibilit\u00e0 che il potenziale redox venga alterato, soprattutto se elevato, <strong>favorendo cos\u00ec lo sviluppo di microrganismi aerobi e la reazione di ossidazione.<\/strong><\/p><p>\u00c8 necessario conoscere i valori di potenziale prodotti durante il processo di vinificazione, <strong>perch\u00e9 da essi dipendono in larga misura le propriet\u00e0 organolettiche dei vini.<\/strong><\/p><p>Allo stesso modo, <strong>prima dell&#8217;imbottigliamento, \u00e8 molto conveniente conoscere il potenziale redox del vino<\/strong> per determinare quale tendenza pu\u00f2 seguire durante la permanenza in bottiglia. Ci\u00f2 consentir\u00e0 di prendere decisioni che favoriscano la corretta evoluzione del prodotto, come l&#8217;eliminazione dell&#8217;ossigeno disciolto, il dosaggio degli antiossidanti o la scelta
