Sa teneur en mannoprot\u00e9ines solubles, non li\u00e9es aux polysaccharides, agit rapidement sur la sensation de volume dans la bouche, en \u00e9liminant les \u00e9ventuels d\u00e9s\u00e9quilibres et en filtrant l&#8217;impact sensoriel des mol\u00e9cules ind\u00e9sirables.<\/p>\n<p>Le citrate de cuivre lie les mol\u00e9cules de soufre avec une plus grande affinit\u00e9 et a moins d&#8217;impact sur l&#8217;\u00e9quilibre sensoriel du vin que le sulfate de cuivre. La combinaison de ce sel avec les \u00e9corces de levure permet d&#8217;\u00e9liminer le cuivre du vin une fois qu&#8217;il a fait son effet.<\/p>\n<p>Le Mannocup permet une \u00e9limination tr\u00e8s efficace des compos\u00e9s soufr\u00e9s sans d\u00e9valoriser le patrimoine aromatique du vin et sans augmenter significativement sa teneur en cuivre.
