Son action consiste \u00e0 rompre les parois cellulaires du<br \/>\nBact\u00e9ries \u00e0 Gram positif, y compris les bact\u00e9ries lactiques (Oenococcus, Pediococcus et Lactobacillus).<\/p>\n<p>Le lysozyme n&#8217;est pas actif contre les bact\u00e9ries \u00e0 Gram n\u00e9gatif telles que les bact\u00e9ries de l&#8217;acide ac\u00e9tique, car la structure de leur paroi cellulaire est diff\u00e9rente et plus r\u00e9sistante. Il n&#8217;a aucune activit\u00e9 sur les levures et n&#8217;a donc aucune influence sur la fermentation alcoolique.<\/p>\n<p>L&#8217;efficacit\u00e9 du lysozyme d\u00e9pend non seulement du type de bact\u00e9ries, mais aussi du nombre de cellules bact\u00e9riennes pr\u00e9sentes dans le milieu.<br \/>\nContrairement au SO2, le lysozyme est plus efficace \u00e0 pH \u00e9lev\u00e9, lorsque la croissance des bact\u00e9ries lactiques est la plus favorable.<\/p>\n<h4>APPLICATION<\/h4>\n<ul>\n<li>Inhibition de la fermentation malolactique dans la production de jeunes vins rouges et blancs afin de pr\u00e9server l&#8217;acidit\u00e9.<\/li>\n<li>Retarder la FML apr\u00e8s la fermentation alcoolique dans la vinification en rouge, permettant de travailler avec la micro-oxyg\u00e9nation.<\/li>\n<li>Stabilit\u00e9 microbiologique de la population bact\u00e9rienne des vins rouges apr\u00e8s la fermentation malolactique, en r\u00e9duisant la dose de SO2 utilis\u00e9e lors de la conservation du vin.<\/li>\n<li>Le traitement des arr\u00eats de fermentation permet d&#8217;\u00e9viter la consommation des sucres du mo\u00fbt par les bact\u00e9ries lactiques (amidon lactique) et de r\u00e9duire le risque d&#8217;augmentation de l&#8217;acidit\u00e9 volatile.<\/li>\n<\/ul>\n<h4>DOSAGE<\/h4>\n<div class=\"page\" title=\"Page 2\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>Stabilisation apr\u00e8s la FML : &gt; 15 g\/hl<\/p>\n<p>Apparition tardive de la FML : &gt; 25 g\/hl<\/p>\n<p>Blocage de la FML : 50 g\/hl<\/p>\n<\/div>\n<div class=\"column\">\n<p>&nbsp;<\/p>\n<\/div>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Le lysozyme est une enzyme largement r\u00e9pandue parmi les organismes vivants comme m\u00e9canisme de d\u00e9fense antibact\u00e9rien.
