Naturellement pr\u00e9sents\u00a0 dans les parties solides du raisin (peaux, p\u00e9pins, rafles) ou ajout\u00e9s de mani\u00e8re exog\u00e8ne, les tanins sont\u00a0 pass\u00e9s du statut de composant passif du vin \u00e0 celui d&#8217;outil strat\u00e9gique de l&#8217;\u0153nologie moderne.<\/span><\/div>\n<\/div>\n<div class=\"zw-paragraph\" data-width=\"567.1679999999999\" data-textformat=\"{&quot;size&quot;:10}\">\n<div class=\"zw-line-div\">\n<div><\/div>\n<div class=\"zw-line-content\">La recherche de profils organoleptiques diff\u00e9renci\u00e9s, la n\u00e9cessit\u00e9 de compenser les d\u00e9s\u00e9quilibres dus au changement climatique et l&#8217;\u00e9volution des go\u00fbts des consommateurs ont fait des tanins &#8211; en particulier ceux de l&#8217;affinage &#8211; des alli\u00e9s essentiels pour obtenir des vins stables, expressifs et adapt\u00e9s aux diff\u00e9rents march\u00e9s.<\/div>\n<\/div>\n<\/div>\n<div class=\"zw-paragraph\" data-width=\"567.1679999999999\" data-textformat=\"{&quot;size&quot;:10}\">\n<div class=\"zw-line-div\">\n<p>&nbsp;<\/p>\n<h2 class=\"zw-line-content\"><strong><span class=\"zw-portion zw-text-portion\" data-text-len=\"35\">Classification\u00a0et\u00a0origine\u00a0botanique<\/span><span class=\"EOP-readonly EOP\">\u00a0<\/span><\/strong><\/h2>\n<div><span class=\"zw-portion zw-text-portion\" style=\"font-size: 16px;\" data-text-len=\"82\">D&#8217;un point de vue structurel, les tanins sont divis\u00e9s en deux groupes principaux :<\/span><span class=\"EOP-readonly EOP\" style=\"font-size: 16px;\">\u00a0<\/span><\/div>\n<div><\/div>\n<\/div>\n<\/div>\n<div class=\"zw-paragraph heading105\" data-width=\"567.1679999999999\" data-header=\"105\" data-textformat=\"{&quot;size&quot;:10}\">\n<div class=\"zw-line-div\">\n<h3 class=\"zw-line-content\"><strong><span class=\"zw-portion zw-text-portion\" data-text-len=\"21\">Les tanins condens\u00e9s<\/span><\/strong><\/h3>\n<div>Ils proviennent des tissus v\u00e9g\u00e9taux tels que les graines, les peaux ou les tiges. Ils sont constitu\u00e9s de flavono\u00efdes polym\u00e9ris\u00e9s et leur degr\u00e9 de polym\u00e9risation influence leur comportement \u0153nologique (astringence, r\u00e9activit\u00e9, solubilit\u00e9). Par exemple, les tanins de p\u00e9pins ont un degr\u00e9 de polym\u00e9risation moyen de 11, tandis que les tanins de peau atteignent des valeurs de 30. Tanicol Vintage est un exemple repr\u00e9sentatif de tanin condens\u00e9 : 100 % \u00e0 base de p\u00e9pins de raisin, il se caract\u00e9rise par sa grande r\u00e9activit\u00e9, son pouvoir antioxydant et sa capacit\u00e9 \u00e0 am\u00e9liorer la stabilit\u00e9 de la couleur.<\/div>\n<div><\/div>\n<\/div>\n<\/div>\n<div class=\"zw-paragraph\" data-width=\"567.1679999999999\" data-textformat=\"{&quot;size&quot;:10}\">\n<div class=\"zw-line-div\">\n<h3 class=\"zw-line-content\"><span class=\"zw-portion zw-text-portion\" style=\"font-size: 1.5em; font-weight: bold;\" data-text-len=\"20\">Tanins hydrolysables<\/span><span class=\"EOP-readonly EOP\" style=\"font-size: 1.5em; font-weight: bold;\">\u00a0<\/span><\/h3>\n<div><span style=\"font-size: 16px;\">Ils ne sont pas pr\u00e9sents naturellement dans le raisin, mais peuvent \u00eatre incorpor\u00e9s au vin \u00e0 partir du bois (barriques) ou par ajout contr\u00f4l\u00e9.
