Un autre sc\u00e9nario dans lequel nous recommandons la <strong>co-inoculation<\/strong> est celui o\u00f9 nous devons commercialiser le vin rapidement ; cette pratique permet non seulement<\/p>\n<p>d&#8217;avancer le d\u00e9but de la FML mais aussi de r\u00e9duire de pr\u00e8s de trois fois le temps de la fermentation malolactique.<\/p>\n<p>Sur le plan aromatique, les vins <strong>co-inocul\u00e9s<\/strong> ont une plus grande intensit\u00e9 de fruit, r\u00e9duisant les notes lactiques.<\/p>\n<p>La <strong>co-inoculation<\/strong> a \u00e9galement un effet <strong>bioprotecteur<\/strong>, en emp\u00eachant le d\u00e9veloppement des microorganismes pendant le d\u00e9but de la fermentation et leur d\u00e9veloppement ult\u00e9rieur pendant la p\u00e9riode entre la fermentation alcoolique et la fermentation malolactique.
