En outre, en raison du contexte de l&#8217;effet de la nutrition azot\u00e9e sur la lib\u00e9ration des ar\u00f4mes, l&#8217;objectif est de r\u00e9aliser une \u00e9tude d\u00e9taill\u00e9e de l&#8217;influence de l&#8217;azote sur les caract\u00e9ristiques m\u00e9taboliques et enzymatiques des levures s\u00e9lectionn\u00e9es.<\/p><p>Avec ces deux \u00e9tudes, l&#8217;objectif est d&#8217;obtenir une vision plus large de la fa\u00e7on dont la nutrition azot\u00e9e peut affecter la lib\u00e9ration des ar\u00f4mes vari\u00e9taux \u00e0 travers l&#8217;activit\u00e9 enzymatique des levures responsables de la r\u00e9v\u00e9lation des pr\u00e9curseurs aromatiques dans le vin pendant la fermentation.<\/p><p><strong>APPEL \u00c0 PROPOSITIONS\u00a0: <\/strong>CDTI.
