Le manque d&#8217;informations sur les capacit\u00e9s fermentaires de chaque souche signifie que les vinificateurs ne travaillent souvent pas avec les souches les plus appropri\u00e9es pour les conditions du mo\u00fbt avec lequel ils travaillent, ou pour le type de vin qu&#8217;ils veulent produire. De plus, dans les \u00e9tablissements vinicoles, Saccharomyces est presque exclusivement utilis\u00e9e pour la production de vin, alors qu&#8217;il est maintenant connu qu&#8217;il existe une multitude d&#8217;activit\u00e9s enzymatiques associ\u00e9es \u00e0 d&#8217;autres esp\u00e8ces de levures qui ont un effet tr\u00e8s appr\u00e9ciable sur le profil sensoriel des vins. L&#8217;objectif g\u00e9n\u00e9ral de ce projet de R&amp;D intitul\u00e9 \u00ab\u00a0\u00c9TUDE DES ACTIVIT\u00c9S ENZYMATIQUES ET DES \u00c9L\u00c9MENTS ANTIOXYDANTS D&#8217;ORIGINE BIOLOGIQUE POUR L&#8217;AM\u00c9LIORATION DES VINS BLANCS ET ROS\u00c9\u00a0\u00bb, est de s&#8217;attaquer \u00e0 ce probl\u00e8me, en se concentrant sur une s\u00e9lection et une caract\u00e9risation des activit\u00e9s enzymatiques des levures qui permettront au vinificateur de choisir les souches les plus appropri\u00e9es en fonction de ses besoins dans l\u2019\u00e9tablissement vinicole, afin de tenir compte de tout ce qui pr\u00e9c\u00e8de et de fournir aux viticulteurs, dans un march\u00e9 du vin de plus en plus technologique, les outils appropri\u00e9s pour une approche innovante de la vinification, il s&#8217;agit de d\u00e9velopper diff\u00e9rents objectifs au moyen des approches exp\u00e9rimentales les plus appropri\u00e9es dans chaque cas.<\/p><p><strong>APPEL \u00c0 PROPOSITIONS\u00a0: <\/strong>CDTI.
