S<em>accharomyces<\/em> et <em>non-Saccharomyces,<\/em>\u00a0de bact\u00e9ries et de champignons qui peuvent pr\u00e9senter un int\u00e9r\u00eat \u0153nologique ou, par contre, \u00eatre \u00e0 l&#8217;origine de d\u00e9viations, est attach\u00e9e \u00e0 la pruine de raisin. Dans une situation non prot\u00e9g\u00e9e, ces micro-organismes indig\u00e8nes s&#8217;imposent comme les pr\u00e9dominants dans le processus de fermentation. La m\u00e9connaissance de la pr\u00e9dominance des esp\u00e8ces et de leurs caract\u00e9ristiques \u0153nologiques rend n\u00e9cessaire leur contr\u00f4le afin d&#8217;\u00e9viter leur d\u00e9veloppement et ainsi am\u00e9liorer l&#8217;implantation des levures que nous choisissons comme plus appropri\u00e9es au caract\u00e8re du vin.<\/p><p>En ce qui concerne le contr\u00f4le microbiologique des populations indig\u00e8nes dans le vignoble, il existe diff\u00e9rentes strat\u00e9gies pour une action efficace, le contr\u00f4le d\u00e9riv\u00e9 des processus biologiques (Biocontrol) \u00e9tant le plus demand\u00e9 ces derniers temps :<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-bf061ba elementor-widget elementor-widget-heading\" data-id=\"bf061ba\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h4 class=\"elementor-heading-title elementor-size-default\">Biocontr\u00f4le<\/h4>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-ff9085b elementor-widget elementor-widget-text-editor\" data-id=\"ff9085b\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\tDans la recherche d&#8217;alternatives au SO<sub>2<\/sub>, des strat\u00e9gies de contr\u00f4le microbiologique d&#8217;origine biologique ont \u00e9t\u00e9 d\u00e9velopp\u00e9es ces derni\u00e8res ann\u00e9es. De cette fa\u00e7on, les processus qui emp\u00eachent la prolif\u00e9ration de micro-organismes ind\u00e9sirables sont bas\u00e9s sur l&#8217;utilisation de substances proches de la nature du vignoble et qui n&#8217;ont en aucun cas un processus de modification g\u00e9n\u00e9tique dans leur d\u00e9veloppement (non-OGM). Son application avant la fermentation entra\u00eenera une production accrue d&#8217;ac\u00e9tald\u00e9hyde par les levures. Son efficacit\u00e9 sera influenc\u00e9e par le pH du mo\u00fbt (SO<sub>2<\/sub> mol\u00e9culaire).
