Naturally present in the solid parts of the grape (skins, seeds, and stems) or added exogenously, tannins have evolved from being considered a passive wine component to becoming a strategic tool in modern winemaking.<\/p>\n<p data-start=\"610\" data-end=\"886\">The pursuit of distinctive organoleptic profiles, the need to correct imbalances caused by climate change, and evolving consumer tastes have positioned tannins\u2014especially fining tannins\u2014as essential allies for achieving stable, expressive wines adapted to different markets.<\/p>\n<h2>Classification and Botanical Origin of Tannins<\/h2>\n<p data-start=\"947\" data-end=\"1022\">From a structural perspective, tannins are divided into two major groups:<\/p>\n<h3 data-start=\"1024\" data-end=\"1048\">Condensed Tannins<\/h3>\n<p data-start=\"1049\" data-end=\"1387\">These come from plant tissues such as seeds, skins, or stems. They are formed by polymerized flavonoids, and their degree of polymerization influences their enological behavior (astringency, reactivity, solubility). For example, seed tannins have an average polymerization degree of 11, while skin tannins can reach values of around 30.<\/p>\n<p data-start=\"1389\" data-end=\"1581\"><strong data-start=\"1389\" data-end=\"1408\">Tanicol Vintage<\/strong> is a representative example of a condensed tannin: 100% grape-seed-based, characterized by high reactivity, antioxidant power, and the ability to improve color stability.<\/p>\n<h3 data-start=\"1583\" data-end=\"1610\">Hydrolyzable Tannins<\/h3>\n<p data-start=\"1611\" data-end=\"1741\">These are not naturally found in grapes but can enter wine through wood (barrels) or controlled addition. They are divided into:<\/p>\n<ul data-start=\"1743\" data-end=\"1858\">\n<li data-start=\"1743\" data-end=\"1797\">\n<p data-start=\"1745\" data-end=\"1797\"><strong data-start=\"1745\" data-end=\"1762\">Gallotannins:<\/strong> Derived from tara pods or galls.<\/p>\n<\/li>\n<li data-start=\"1798\" data-end=\"1858\">\n<p data-start=\"1800\" data-end=\"1858\"><strong data-start=\"1800\" data-end=\"1818\">Ellagitannins:<\/strong> Obtained mainly from oak or chestnut.<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"1860\" data-end=\"1992\">Both types present antioxidant properties, protein reactivity, and the ability to promote copigmentation and protect anthocyanins.<\/p>\n<h2 data-start=\"1999\" data-end=\"2054\">Technological and Sensory Applications of Tannins<\/h2>\n<h2 data-start=\"2056\" data-end=\"2082\">Color Stabilization<\/h2>\n<p>&nbsp;<\/p>\n<p data-start=\"2083\" data-end=\"2293\">One of the main current challenges is maintaining color intensity in red wines, especially in cases of limited phenolic ripeness. A combination of condensed and ellagic tannins provides the most effective treatment for enhancing color in red wines.<\/p>\n<h2 data-start=\"4213\" data-end=\"4244\">Protection Against Oxygen<\/h2>\n<p data-start=\"4246\" data-end=\"4328\">The antioxidant action of tannins occurs through three complementary mechanisms:<\/p>\n<ol data-start=\"4330\" data-end=\"4524\">\n<li data-start=\"4330\" data-end=\"4370\">\n<p data-start=\"4333\" data-end=\"4370\"><strong data-start=\"4333\" data-end=\"4368\">Direct oxygen consumption (O\u2082).<\/strong><\/p>\n<\/li>\n<li data-start=\"4371\" data-end=\"4463\">\n<p data-start=\"4374\" data-end=\"4463\"><strong data-start=\"4374\" data-end=\"4403\">Chelation of heavy metals<\/strong> that catalyze oxidation reactions (such as Fe\u00b3\u207a or Cu\u00b2\u207a).<\/p>\n<\/li>\n<li data-start=\"4464\" data-end=\"4524\">\n<p data-start=\"4467\" data-end=\"4524\"><strong data-start=\"4467\" data-end=\"4500\">Inhibition of oxidase enzymes<\/strong> (antioxidase effect).<\/p>\n<\/li>\n<\/ol>\n<p data-start=\"4526\" data-end=\"4623\">These functions improve wine longevity and resistance to both chemical and microbial oxidation.<\/p>\n<h2 data-start=\"4630\" data-end=\"4657\">Protein Precipitation<\/h2>\n<p data-start=\"4659\" data-end=\"4926\">During the initial stages of fermentation, tannins can form complexes with unstable must proteins. Their early precipitation favors cleaner and more stable winemaking, protecting the grape\u2019s native tannins. Ellagic tannins are particularly reactive toward proteins.<\/p>\n<h2 data-start=\"4933\" data-end=\"4973\">Contribution to Body and Structure<\/h2>\n<p data-start=\"4975\" data-end=\"5244\">Both condensed and ellagic tannins increase the total polyphenol index (TPI), enhancing mouthfeel, volume, persistence, and roundness. This is especially useful in wines with low phenolic extraction or in those targeting markets that prefer smooth, balanced profiles.<\/p>\n<h2 data-start=\"5251\" data-end=\"5295\">Alignment with Desired Sensory Profile<\/h2>\n<p data-start=\"5297\" data-end=\"5467\">Fining tannins allow winemakers to shape the wine\u2019s style after fermentation. Depending on the botanical source and thermal treatment, specific effects can be achieved:<\/p>\n<ul data-start=\"5469\" data-end=\"5914\">\n<li data-start=\"5469\" data-end=\"5533\">\n<p data-start=\"5471\" data-end=\"5533\"><strong data-start=\"5471\" data-end=\"5481\">Fruit:<\/strong> Red Vintage, Tan Sutil, Tanicol Blanc Excellence.<\/p>\n<\/li>\n<li data-start=\"5534\" data-end=\"5610\">\n<p data-start=\"5536\" data-end=\"5610\"><strong data-start=\"5536\" data-end=\"5551\">Sweet wood:<\/strong> Robletan Oakblend (lightly toasted oak \u2192 vanilla notes).<\/p>\n<\/li>\n<li data-start=\"5611\" data-end=\"5716\">\n<p data-start=\"5613\" data-end=\"5716\"><strong data-start=\"5613\" data-end=\"5630\">Complex wood:<\/strong> More toasted tannins \u2192 coffee and chocolate notes (Robletan Coeur, Robletan Ic\u00f2ne).<\/p>\n<\/li>\n<li data-start=\"5717\" data-end=\"5795\">\n<p data-start=\"5719\" data-end=\"5795\"><strong data-start=\"5719\" data-end=\"5753\">Structure without astringency:<\/strong> Grape tannins, Tan Sutil, Tan Reactive.<\/p>\n<\/li>\n<li data-start=\"5796\" data-end=\"5914\">\n<p data-start=\"5798\" data-end=\"5914\"><strong data-start=\"5798\" data-end=\"5812\">Sweetness:<\/strong> Combinations with arabic gums (Gomasol Seda), mannoproteins (Mannoplus), and vanillin-type tannins.<\/p>\n<\/li>\n<\/ul>\n<h2 data-start=\"5921\" data-end=\"5973\">Modern Winemaking and Consumer-Oriented Fining<\/h2>\n<p data-start=\"5975\" data-end=\"6267\">Traditionally, winemaking began in the vineyard, focusing on quality at each stage before finding the right audience.
