New Delegated Regulation (EU) 2022\/68"},"content":{"rendered":"<p>The entry into force of the <strong>new Delegated Regulation (EU) 2022\/68<\/strong>, which establishes the authorized oenological treatments and compounds, has been one of the most anticipated new items for the sector due to the novelties presented compared to the previous regulation.<\/p>\n<p>At the <strong><a title=\"Agrovin\" href=\"https:\/\/agrovin.com\/en\/\">AGROVIN <\/a><\/strong>Technical Department, we have analysed in detail the modifications included in the new Regulation to see at a glance these novelties in each of the processes in order to facilitate the work of the <strong>winery oenology departments.<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>Notable novelties include the following:<\/p>\n<ul>\n<li>The incorporation into the regulations of the \u201c<strong>Ultrasound treatment of crushed grapes<\/strong> to favour the extraction of their compounds\u201d thanks to our innovative <strong><a href=\"https:\/\/agrovin.com\/en\/technology\/ultrawine-perseo\/\">Ultrawine Perseo<\/a><\/strong> eco system, which improves the quality of the wine and helps to mitigate the effects of <strong>climate change <\/strong>in the lag of grape ripening, through the<strong> application of ultrasound<\/strong>.<\/li>\n<li>The extension of the use of CMC (Carboxymethicellulase) in <strong>ros\u00e9 wines <\/strong>and the increase of the maximum allowed dose to 0.2 g\/hl.<\/li>\n<li>The incorporation of <strong>acidifying bacteria and yeasts<\/strong> as acidity regulators.<\/li>\n<li>Approval of the incorporation of <strong>fumaric acid<\/strong> as a stabilizer.<\/li>\n<li>Finally, the new regulation indicates that new enzymatic activities have been incorporated, such as: Arabinasa, Beta-glucanasa (\u00df1-3, \u00df1-6), Glucosidasa and Aspergillopepsina I.<\/li>\n<\/ul>\n<p>The following tables indicate a summary of the most significant aspects
